Texas Caviar (Southwest Black Bean Salad)

Black beans are Texas Caviar. Creamy, mouth-popping flavor serves as a stand-alone meal or as a nice addition to the Cowboy party buffet.

Ingredients
  

  • 2-3 cups black beans 2 cans if you don't make your own
  • 1 bell pepper any color, chopped
  • 1 cucumber chopped
  • 1 cup chopped tomatoes
  • 1 cup green onions
  • 1 cup broccoli
  • 1 cup cauliflower
  • 1 cup corn
  • 1 cup carrots
  • 1/2 cup chopped cilantro
  • 2 avocados
  • 1 Tbsp. cumin
  • 1 Tbsp. chili powder
  • 1 Tbsp. garlic powder
  • 1 tsp. sea salt
  • 2 Tbsp. balsamic vinegar
  • 1 Tbsp. lime juice
  • 1 small jalepeno optional

Instructions
 

  • Chop or dice all of the vegetables to small bite size. The avocados will provide the creamy texture, so pre-mash if they are not ripe enough to "dissolve" on their own. Add the spices, and toss thoroughly.
  • Serve over lettuce or place in center of a platter of tortilla chips. Flavors intensify as they marinate. Serve chilled and enjoy.
