Yep, this recipe has a lot of ingredients. But once they are assembled, it's quick. And so worth it. This authentic Italian sauce is a culinary masterpiece. Serve over fettuccini and/or with sautéed seasonal mushrooms and vegetables.

Ingredients
- 1 cup onion chopped
- 4 cloves garlic chopped
- 1 cup cauliflower chopped
- 1 cup mushroom chopped
- 1 cup radishes chopped
- 1 Tbsp. lemon juice
- 1/2 tsp. onion powder
- 1/2 tsp. garlic salt
- 1/2 cup water + 3 Tbsp. divided
- 1/2 cup unsweetened nondairy milk or kefir
- 1/2 cup raw cashews soaked in warm water
- 1 can white beans of choice 15.5 oz
- 4 Tbsp. nutritional yeast flakes
- 2 tsp. tahini or hulled sesame seeds
- 2 tsp. miso paste
- 1 green onion
- 1 tsp. salt
- 1/2 tsp. ground mustard powder
- 1/8 tsp. black pepper
- 1/8 tsp. cayenne powder optional
- 1 pinch black pepper

Instructions
- Chop all vegetables and assemble other ingredients so everything is at your fingertips.
- In a medium size pot, sauté onion, mushroom and garlic with 3 Tbsp. of water, stirring frequently. Add extra water if necessary to avoid sticking.
- Add cauliflower, mushrooms, radishes, lemon juice, onion powder, garlic granules, ½ cup water and the nondairy milk to the pot. Bring to a boil over high heat. Cover and simmer at medium-low heat for 15 minutes.
- While the vegetables are cooking, prepare pasta or desired base according to package directions.
- Transfer the contents of the pot and add the remaining ingredients to a blender. Blend until super creamy and smooth, about two full minutes.
- Serve over fettuccini or sautéed seasonal mushrooms and vegetables.
