Parent and Kid Approved: Vegan Lentil “Meatloaf”

I can’t believe they ate it. Without questioning. Without hesitation. All of it. Meatloaf. My kids just wolfed down lentils with flax seed, onions, mushrooms, carrots, and kale and asked for more! Score! How did I do it, you ask? So easy. I packaged it all in a pretty 8×8 baking dish topped with ketchup and organic barbecue sauce. We finished it off. Good thing I made 2 extras. This recipe for Vegan Lentil Meatloaf is a keeper.

Vegan Lentil Meatloaf:

  • 4 c lentils and 8 c water
  • 1/2 c ground flax and 1 c water
  • 3 c old fashioned oats
  • 4 cloves garlic, minced
  • 1 medium onion, diced
  • 1 c mushrooms, diced
  • 8 medium carrots, diced
  • 3 stalks of celery, diced
  • 3 kale leaves and stalks, diced
  • 1/2 c sunflower or sesame seeds (optional)
  • 3 T italian seasoning
  • 1 T cumin (optional)
  • 1/2 t chili powder (optional)
  • 1 T dried parsley
  • 1/2 c unsweetened almond milk
  • 1 8 oz can tomato sauce, no salt added
  • 1 c bbq sauce, divided
  • t garlic powder
  • 2 t  pepper
  • 1/4 c organic ketchup

Cook lentils in boiling water until tender (I used pressure cooker). Transfer cooked lentils to large mixing bowl and allow to cool. Mix ground flax seed and water and let stand for about 10 minutes.  Add oats, sunflower seeds, onion, garlic, carrots, celery, mushrooms, and kale to food processor and pulse until combined. Add mixture to bowl of cooled lentils along with flax binder mixture,tomato sauce, 1/2 c bbq sauce, garlic, Italian seasoning, parsley, unsweetened almond milk, and pepper and combine thoroughly (I used my hands).Use remaining 1/2 c bbq sauce and ketchup for topping. Bake 350 for about 1 hour or longer. Allow to set for about 20 minutes or longer before serving.  We like it even better the day after we make it!  Enjoy the Vegan Lentil Meatloaf!

Vegan Lentil “Meatloaf” Muffins with Tomato “Jam”

Tomato “Jam”:

  • 1 pound diced tomatoes, drained
  • 1/4 t pepper
  • 1 t smoked paprika
  • 1 T lemon juice
  • 2 T ketchup or
  • BBQ sauce

Combine all ingredients in medium saucepan. Bring to a boil, then reduce heat to low and simmer for about 15 minutes, stirring often. Stir in lemon juice, paprika, pepper, and sauce and cook for about 10 minutes.  Use as a topping for Vegan Lentil “Meatloaf” Muffins or Vegan Lentil Meatloaf. Enjoy!
