I was inspired yet again from reading the Joy of Vegan Baking. This time, I whipped up this simple and delicious dessert of Chocolate Pudding with Dates, Bananas, and Nuts with the “help” of the kids. We loaded up the Vitamix with the goodies, let it whirl, and served it topped with unsalted roasted peanuts, unsweetened shredded coconut, and a few vegan chocolate chips. After enjoying their pudding, they licked their bowls and requested more. Win-win! Enjoy!

  • 3-4 T of nut butter (I used mixture of peanut and almond butter.)
  • 1 1/2 c unsweetened almond milk, vanilla
  • 2 ripe frozen bananas, peeled
  • 4 Medjool dates, pitted
  • 1 T ground flax, organic
  • 1 T ground chia seeds, organic
  • 2 T ground cinnamon
  • 3 T vegan brown rice protein powder (I found the MLO brand protein powder in the natural foods section at my local Kroger Marketplace. You can also find MLO out at www.mloproducts.com)
  • 3-4 T unsweetened cocoa powder
  • 3 t vanilla extract
  • 1 T cacao nibs
  • 1/4 c unsweetened coconut (optional)
  • 1 T vegan chocolate chips (optional)
