These flavorful little treats are a nutritious snack or dessert that is sure to satisfy. They are super easy to make and require no baking, making them a great recipe for the kids to join in on the kitchen action.  Enjoy!

  • 6 organic medjool dates, pits removed
  • ¼ c pumpkin puree
  • 2T molasses
  • 1T honey or brown rice syrup
  • 2 T vanilla
  • 2T cinnamon
  • 1 T pumpkin pie spice
  • 1 T ground flax
  • 2 c oatmeal
  • 1/3 c almonds, chopped
  • 1/3 c walnuts, chopped
  • 1/3 c pecans, chopped
  • 1 c shredded organic carrots
  • ½ c organic raisins

Mix dates, pumpkin puree, molasses, honey, vanilla, cinnamon, pumpkin pie spice, and ground flax blender or food processor.  Transfer mixture to mixing bowl and stir in oatmeal, nuts, carrots, and raisins.  Mix well using hands and form into balls.  Place on cookie sheet and refrigerate for about an hour to set.  Freezes well in air tight container.  Enjoy!
