I was in the mood for a chocolaty treat, so I rolled up my sleeves, put on my apron, and searched the cupboards for some tasty ingredients that would both nourish and satisfy.  As I added ingredients to the food processor, I tasted until I came up with just the right mix of chocolate sweetness and hearty texture.  The best part is that they didn’t require baking, so I enjoyed them on the spot!  Satisfied!

  • 6 organic figs, stems removed
  • 2 organic medjool dates, pit removed
  • 2T molasses
  • 2T honey or brown rice syrup
  • 2T vanilla
  • ¼ c organic black beans, drained and rinsed
  • 1/2 T raw cacao nibs
  • 2T cinnamon
  • 1T ground flax
  • 3 T unsweetened cocoa powder
  • 2 c oatmeal
  • ½ c shreaded coconut
  • ½ c organic raisins
  • 1 c almonds, chopped
  • ½ c walnuts, chopped

Mix figs, dates, molasses, honey, vanilla in a blender or food processor.  Add in black beans, cacao nibs, cinnamon, flax, cocoa powder.  Transfer mixture to large mixing bowl and stir in oatmeal, coconut, raisins, and mixed nuts to reach desired consistency.  Mix well using hands to form into balls.  Place on cookie sheetand refrigerate for about an hour to set.  Freezes well in air tight container.  Enjoy!
